Full of anti-oxidants, this colorful salad was a huge hit with my family last night. I added thinly sliced red radishes for more color appeal, but you can subsitute thin slices of red onion or green spinach leaves to amp up the health and color quotient.
Plus- it’s a very simple salad to put together on any busy night, ensuring the family gets their daily quota of fruits and vegetables.
You can either cube or slice two mangoes and two avocadoes. Top with thinly sliced radishes, or half a red onion, or two handfuls of baby spinach leaves. Add two to three tablespoons of very good quality extra virgin oil, squeeze juice from one or two lemons, salt and lots of black pepper. Toss or mix everything very gently, let it sit for a few minutes and serve.
