Malabar Parathas

As promised in the Mutton Pepper Fry recipe on our blog below, here’s a recipe for a logical and delicious accompaniment: Malabar parathas! This is bread made in the style of the Malabar region of India (northern Kerala, a state in South India).

Ingredients:

  • All purpose flour: 1/2lb
  • Milk: 1/4 cup
  • Sugar: 1/2tsp
  • Oil : about a 1/4 cup
  • Salt: pinch

Method:

  • Mix the flour with sugar and salt
  • Add the milk in slowlyKnead till you get a dough, like you would for pizza
  • Cover the dough with cheesecloth and let it stand about 15 minutes
  • Knead the dough again – it should feel softer
  • Slice the dough into 8 parts
  • Roll those up into individual balls, and cover again with cheesecloth, this time for about 5 minutes
  • Flatten these with your hands, or a spatula, until they are thin
  • Then roll these into little spirals
  • Heat the oil in a deep frying pan, and add the spirals
  • Once they fry to a golden brown, lay them on a paper towel to drain the excess oil

Enjoy with Mutton Pepper fry, or just about anything else you’d like!
